Pasta of all kinds raises my blood sugar. Tomatoes do too, but, hey, sometimes we just have a yearning.
Here's what I just made for dinner:
Zucchini, subbing as pasta, fresh from the garden, plus tomato sauce.
Cook the zucchini strips in boiling water until al dente
Meanwhile, saute in olive oil
mushrooms and slivers of garlic
Add a can of Hunt's tomato sauce. It has no salt added.
Spoon the tender zucchini into a big bowl.
Add fresh herbs from the jardin - basil and thyme - and sprinkle with Romano cheese.
Careful! Don't burn your tongue.
Uncommonly delicious!
